It’s been a long time since I have participated in a “What I Ate Wednesday” post but I am happy to be back at it. I don’t know what it is about seeing what other people eat but it’s kind of fun, in a nosy sort of way. Admittedly, sometimes I cringe and wonder, “How do they get full eating that small amount” or “How in the world do they choke that down” but more often than not, it gives me some food inspiration. I am always looking for new ideas, especially for lunch and the WIAW link up is a great place to find it.
Not that I am going to be especially inspirational in my eats but hey, I’ll show you anyway!!
6:30am: Every morning, I start my day with a cup of coffee. Thank goodness for my Keurig because I can have that hot, steamy cup of goodness within about a minute of getting out of my bed. And I do.
In between drinking my coffee and eating breakfast, I managed to get a short but sweet workout in. Today’s daily dose of healthy consisted of a 25 minute Turbo Jam HIIT workout and 1 mile on the treadmill. I was a bit feverish yesterday and was still feeling a tad under the weather this morning so I did what I could without pushing too hard. It was a nice way to get an extra energy boost(besides the cup of coffee) this morning.
9:30am: Grapefruit sprinkled with stevia, 1 slice whole grain bread with peanut butter.
After breakfast, I picked up around the house, showered and threw some laundry in the washer. Trying to be productive.
12:30pm: I was ready to get out of the house to go shopping so I threw together a super quick but tasty lunch. Turkey, cheese, tomato, pickle and avocado on top of a whole wheat, low carb tortilla. YUM!!
2:00pm: I told my kids if they were good, I would treat them to some frozen yogurt. I am so not above a good bribe, especially when it comes to shopping. They can make or break a shopping trip so I was trying my hardest to keep it enjoyable. Ha!! Anyway, we stopped for some frozen yogurt and it was quite good. I got a little bit of toasted marshmallow and cheesecake flavors. I topped it with cheese cake bites, cookie dough and Butterfinger. The best!!
6:00pm- We made it home around 5:30 so I wanted to make something that would come together pretty quickly. I decided on an oven taco recipe that I found of Pinterest. It was super easy, ready in about 30 minutes and quite delicious!! I paired the tacos with some salad for a well-rounded meal.
9:00pm- It never fails. After I put the kids to bed for the night, I start to crave a little something sweet. Most nights I give in to that craving and this one was no exception. I helped myself to a couple of Hershey peppermint bark bells that I picked up at Target while out shopping. They were yummy but I still favor the Dove Peppermint Bark. Still, I have a feeling I will have no problem eating these up!!
So, there you go, a day in the “eating” life of Suzanne. Exciting, huh?!
